I learned piano as a child. About 6 or 7 years ago I decided to try playing the guitar. When I was small I started off with pastry after that I went into cooking and cuisine. The period in between, from pastry to cooking, coincided with my shift from piano to guitar, and I think they are very similar things.
Piano is very elegant, everything needs to be played perfectly, you need to follow the notes. But guitar is a very freestyle thing, like cooking; when adding a pinch of salt, you don’t need to be very precise.
When I moved to playing the guitar it took me a while to get used to it. And when going back to the piano it took me a while to get used to that again. In the same way when I go from cooking back to pastry, I need to get used to measuring the right quantities of sugar, attaining the right consistency, the right temperatures, butter… after a while I get used to all these and now after a few years I can jump between the two very well. I can sit in front of a piano and play very freely, and enjoy the process, before I needed to think about it more. Likewise, I can now make pastry freely, but still following all the rules.
Both benefit me. I now not just a cuisine chef, or just a pastry chef- I am both!
音樂旅程—由精準走向隨性,周而往復
當我還是一個小孩子的時候,我一直在不斷地學習彈奏鋼琴,而就在六七年前,我決定開始去嘗試吉他。這讓我想起,當我還很小的時候,我便開始學習烘焙,之後的幾年,我選擇進入烹飪製作的世界。在從烘焙轉到烹飪製作,和學習鋼琴轉至彈奏吉他,這兩者之間,我認為它們是相似的,且有關聯的事情。
在我心目中,鋼琴是非常優雅的,在其中每一件事你都需要做得完美至極,你要去遵循它的每一個重要事項。但,吉他卻與之相反,它是非常的自由隨性。就像烹飪那樣,當你用手去揪一小撮食鹽的時候,它並不需要那麼精確。
當我從鋼琴轉去學吉他,我花了一段時間去適應這種變化。而當我又重新回到鋼琴的世界中時,也需要再一次的去適應鋼琴的節奏。這樣的過程,像極了我從烹飪回到了烘焙一般。又需要去用精確的稱量方法去計量每一毫克的糖粉,以便它是準確無誤的。把握精確的溫度,黃油的重量等等,這一切又重新回歸完美與精確。在經歷了一段時間的磨合之後,現在的我已經能夠在兩者之間不停地自由轉換。我能夠坐在鋼琴面前,自由隨性地去演奏的同時,去享受這個過程,而在此之前的我還需要花時間去思考一番突然的轉變。同樣的道理,我現在也能夠更自由地去進行烘焙的工作,但所有的這一切都還是在遵循著既有的規則的原則之下進行融合。
我在這兩種事物的不停轉換與磨合中,受益匪淺。現在的我,不僅僅是一個烹飪廚師,又或者我不僅僅是一個烘焙廚師,也許兩者的我都是,也都同樣精彩!
